Need a fresh spin on your prawn-and-salad combo for summer? This watermelon and feta combination is perfect for the heat.
Method
- 1.Peel the prawns and place in a bowl and refrigerate.
- 2.Cut the watermelon crosswise into 1cm – 1.5cm slices. Cut off the rind and then cut into triangles or, for a festive look, cut out with a star cookie cutter.
- 3.Combine the onion, cucumbers, radish, feta, olives and mint leaves in a mixing bowl and season with salt and pepper. Go lightly on the salt as there is salt in the feta and olives. Add the prawns and drizzle with some olive oil and lemon juice and toss to combine.
